herby grilled chicken

it’s a perfectly simple one bowl dinner entree, ideal for summer weeknights. you know i love my simple weeknight chicken recipes!!

you can use whatever herbs you like, i always just use whatever we have growing and mix it together. the medley always tastes good. i’ve also done it with skinless chicken breasts and with boneless skinless chicken thighs, both are great. but our family loves a chicken thigh so i usually opt for them.

Ingredients

  • boneless skinless chicken you can use thighs or breasts
  • extra virgin olive oil
  • zest of 1 lemon
  • juice of 1 lemon
  • coarse salt + fresh ground pepper

Fresh Herbs

  • italian flat leaf parsley
  • parsley
  • mint
  • sage
  • tarragon
  • thyme
  • rosemary
  • cilantro

Instructions

  1. chop up all your fresh herbs. i use pretty much everything we have growing, i love the medley of everything mixed together, so use whatever you like!
  2. in a large bowl, mix your chicken with the herbs – i like them heavily coated, so you can always add more herbs if you need to.
  3. add olive oil, salt, pepper, lemon juice and lemon zest into the bowl and mix well.
  4. grill on one side until golden brown, flip and cook until internal temp reaches 165℉

Notes

i didn’t include exact measurements because you can just eyeball how much of everything to use depending on the amount of chicken you use!

(i’ve made this with only a small package of thighs and the kids basically ate it all and we went hungry, so i make more these days lol)

if you want to make a big batch while you go through the trouble of grilling, the leftovers would also make for great lunches over a salad or grain!
